Dry grain barely touches the signal; wet grain drags on it heavily. A damp pocket forming inside the bin slows and weakens exactly the paths that cross it, so the mesh can point at where the trouble is. That is weeks of warning before mold, toxins, or a silo fire.

In the physics: Grain permittivity rises steeply with moisture (dry grain eps_r ~3-4, wet/spoiling pockets trend toward water's eps_r ~80), and settling/caking changes bulk density. These alter both path delay and reflected amplitude through the bin — a physically visible dielectric contrast, not an inference.
